The Best Red Beans And Oxtail

Red beans and Oxtail--allow about 3 hrs. cooking time. My take on a Cajun/Creole recipe.

1 lb. red beans,
2 lb. oxtail,
4 oz. onion,
2 oz. celery,
2 oz. green pepper,
4 bay leaf,
6 garlic cloves,
2 tsp. Cajun seasoning,
1/4 tsp cayenne pepper, 2 tsp. sea salt,
1/3 c. scallion
