The Best Stuffed Lobster With Crabmeat Part 1

Prepare stuffed lobster with crabmeat,

3 and 1/4 lb lobster,
1/2 lb lump or special white crabmeat,
shallots 1/3 cup plus 1 Tab.,
1/2 cup champagne or dry white wine,
3 tsp cajun seasoning,
1/8 cup minced fresh parsley,
1 cup panco breadcrumbs
1/4 cup olive oil or butter.
