8 oz. skinless fish filet(your favorite),
1 Tab. fresh minced parsley,
5 oz. grated potato,
3 cloves minced garlic,
1/4 tsp. cayenne pepper,
1/4 cup minced shallots or onions,
1/4 cup minced carrots,
1/8 cup minced green, yellow or red peppers,
2 Tab. flour,
2 eggs,
1 tsp. salt,
1/4 tsp thyme or your favorite herb,
2 Tab. grated cheese,
1/3 cup plus 1 Tab panco breadcrumbs,
1 Tab. mayonnaise(Hellmans),
1 Tab olive oil
