I used pork butt to have the fat needed

1 tsp smoked paprika,
2.8oz onion,
1 1/2 oz garlic cloves,
1 tsp ground sage,
1 tsp chili powder,
1 1/2 tsp ground fennel seed,
1/2 tsp ground thyme,
1 1/4 tsp pink salt,
1/2 tsp black pepper,
2 tsp light brown sugar,
1/2 tsp cumin,
1/4 c + 1 T ice water,
1 oz cilantro,
1 lb pork,
5 oz pork fat,
1/2 tsp allspice
