Salmon Saffron Mashed Potato Patties

No flour or bread crumbs in this recipe. These have a pleasant crunch.

1-6oz. can salmon
4 garlic cloves
1 small egg
saffron threads
1 tsp fresh parsley
0.7oz shallots
1-T. butter for veg
1 T. extra light olive oil w/1-T butter to saute patties
1/2 oz celery
1/2 tsp dried thyme
9oz peeled russet potato steamed 10-15 minute
0.7 oz yellow pepper or your favorite
1/2 oz baby spinach

chill mix 30 minutes before cooking patties
