Chicken Milanese With Salad

A thinly breaded chicken cutlet which cooks in just six minutes topped off with arugula or your favorite salad. Quick and easy meal.

1&1/4 c. panco breadcrumbs,
2 T. butter,
2 T. olive oil,
1/3 c. parmesan cheese,
1 ea. 5-6 oz. chicken breast,
1/2 qt salad,
balsamic vinegar and extra virgin olive oil
