Turkey Sauce Gravy

Just in time for thanksgiving. The easiest fresh method for an excellent sauce. Have a light roux ready using
1 c. of oil or clarified butter or shortening with 2&1/2 c. flour.
This recipe using 1 qt. of chicken stock (not from cubes or powder),
and optional 1/2 c. dry white wine ( no cooking wines ) .
