Crabmeat Rockefeller cannot replace one of the most delicious items made in New Orleans ( Oyster Rockefeller).. A smooth sauce rich in cream and butter, laced with fresh spinach. Flavored with garlic , shallots white wine and Pernod.

1 lb. lump,
1 T. minced garlic,
3 T. minced shallots,
1 C. heavy cream,
10 oz. baby leaf spinach,
1/2 C. dry white wine,
2 T. Pernod, salt and pepper
