Vegetarian Minted Basmati Rice

Aromatic basmati rice with mint and vegetables to accompany any main dish.

1 c. basmati rice,
1 T. sweetened coconut,
2 garlic cloves,
1 large shallot,
1/8 c. fresh mint,
1/4 c. carrots,
1 tsp. cumin,
1 cinnamon stick,
1&1/2 c. water,
1/8 tsp. pepper,
1 1/2 tsp. sea salt,
1/4 c. toasted almonds
