Using medium tofu which still is soft enough for this purpose. Tofu pieces browned in peanut oil then simmered in a sweet n sour tomato sauce flavored with ginger and garlic.

2 T. rice vinegar,
1/4 c. tomato sauce,
2 T. carrots,
1 T. scallions,
1 T. ginger,
2 garlic cloves,
Roasted peanut oil.
