Mushroom Corn Chowder Dairy Free

This recipe uses fresh corn and chicken stock. A good stock and all fresh items can only result in a pleasurable experience.

2 ears of corn,
4 oz. celery,
8 oz. onions ( substitute some leeks for onions also),
1/3 c. scallions,
2 oz. bacon or pork belly,
2 garlic cloves
2 qts chicken stock,
10 stems of fresh thyme or 2 tsp. dry,
8 oz. favorite mushroom,
2 tsp. sea salt,
1/4 tsp. black pepper,
1/4 c. flour mixed with 1 c. + 1 T. cold water for slurry (thickening agent)
