Moroccan Beef Tajine(Tagine)

A spicy aromatic beef dish from Morocco. Can take from 1&1/2 hours to 3&1/2 hours depending on what cooking method you choose. Goes great with plain boiled potato.
2 lbs. stew meat, olive oil, 14-16 oz. onion, 2 tsp.cumin, 1 tsp. ground ginger, 1 tsp. tumeric, 1/2 tsp. cayenne pepper, 3 cinnamon stick, 1/2 c. chopped fresh parsley, 1 lb. tomato, 3/4 c. water, 3 T. tomato paste.
