Fish And Seafood Stew With Gluten Free Pasta

All fresh vegetables with seafood and fish.
Not overcooked, nice and tender.

1/2 tsp. saffron,
2-3 oz. onion,
1 oz. celery,
1 T. fresh parsley,
10 sprigs fresh thyme,
3 bay leaf,
8-9 oz. tomatoes,
4 ea. mussels,
4 medium size shrimps,
4-5 oz. black cod,
6 piece sea scallops,
1/4 tsp. tumeric,
2 tsp. sea salt,
4 garlic cloves,
2 piece dried chili pepper, 1/2 c. dry white wine, 4 ea. large snails,
1 T. scallions
