Avocado And Potato Salad

An all natural salad using ripe avocado and steamed potatoes.
Follow my list of ingredients and it will be a well balanced salad.

1 ripe avocado,
2 Idaho potatoes,
1/4 c. extra virgin olive oil,
2 T. ea. scallions,
celery and carrots,
1 T. ea. lemon or lime juice,
fresh dill,
green and red pepper,
1/2 tsp. dijon mustard,
1 doz. sweet red cherry tomaotes,
1/2 tsp. salt and pepper mix more if you enjoy salt.
