Chicken And Rice Soup With Avocado

Little bit involved with a good finish. Cutting the vegetables to look good takes time.
Having a good chicken stock is primal ( no cubes or paste ).
Cooking the chicken balls in the soup is simple.

5 c. chicken soup/stock,
2 tsp. minced ginger,
2 garlic cloves sliced or diced,
3-4 oz. onion,
1/3 c. chopped cilantro of which 2 T. go into chicken balls,
1/4 tsp. sweet paprika,
1 tsp. dry oregano for soup,
1/2 tsp. oregano for balls,
8 oz. ground chicken,
1/4 tsp. black pepper,
1 large avocado,
1 lime,
1/4 c. wild rice boiled with 1/2 tsp. sea salt,
2 oz. celery,
1/3 c. scallions,
some for balls the rest for soup
1 egg white
