Onion Bisque

Smooth texture and full of flavor using fresh chicken stock and onions. You can use liquid chicken stock(soup) only.
The cubes are a waste and degrade the soup.
The yield is 2 qts.
If you have more ,
reduce it because it is weak.

1&3/4 lb. onion,
2 garlic cloves,
5 c. chicken stock,
1 c. water added last 2 minutes of cooking,
2 tsp. dried thyme or 8 sprigs fresh,
5 slices bacon,
2 tsp. sea salt,
1/4 tsp. white pepper,
3 oz. crust free french bread
