Chicken With Brown Basmati Rice And Lentil Stew

Gluten and dairy free. Cooking everything in 1 pot for a little over 1 hour. This is not a light and flaky rice dish because the lentils and split peas give it a pleasant sticky consistency. The many items in this recipe give it a unique taste and texture.

2&3/4 lb. boneless chicken leg ,
5 oz. onion,
4 oz. shallots,
6 oz. green pepper,
3/4 c. scallion,
6 garlic cloves,
1 c. yellow split peas(age of split peas determines cooking length),
3 oz. carrots,
4 oz. celery,
5 oz. button mushroom,
fresh sage,
2 T. sea salt,
1 tsp. red pepper flakes,
2 C. brown basmati rice, 1/2 c. toasted almonds,
2 c. cheddar cheese (optional)
