Black Bean Soup

A favorite soup for many people. My recipe because of the special spice and herb mix has a middle eastern flair. Cooking time can be as much as 2&1/2 hours depending on the age of the beans.

1 lb. dry black beans
2 qt. chicken stock
4 oz. prosciutto ham to cook with soup
4 oz. prosciutto ham as garnish
1 c. scallions
8 oz. onion
3 oz. celery
5 garlic cloves
1/2 medium size lemon peeled
1 T. Beau Monde seasoning
1 tsp. sea salt
