Tiny Red Beans With Pepperoni With A Good Amount Of Spice

Dried red beans cooked with vegetables and papperoni

1 lb. small red beans,
fresh thyme and rosemary,
1 green pepper,
5 large shallots or 1 onion,
9 garlic cloves,
1 c. chicken broth, water to just cover beans,
1 1/2 T. Cajun seasoning,
1 T. sea salt, 3 ea. bay leaf,
1 c. pepperoni.
