Chicken With Blackberry Sauce

Fruit sauce with tender chicken

Chicken works with everything so I go with blackberries as the base of the sauce.

1 lb. boneless chicken thighs,
12 oz. blackberries,
1/4 c. shy of cognac/brandy,
7 oz. onions,
2 oz. mushrooms,
1 c. chicken stock ( no cubes ),
3 oz. red pepper,
1 piece fresh rosemary,
1/2 c. all purpose flour or rice or corn flour if you want gluten free,
1 lime peeled,
2/3 c. dark brown sugar.
