Ginger Chicken With Veggies, Mango, No Sauce, Gluten Free

The flavors of ginger, garlic, mango and all fresh vegetables without sugar and gluten free give a delightful taste.

14-16 oz. chicken breast,
6 oz. red onion,
3 oz. celery or 2 ribs peeled,
6-8 garlic cloves,
1T +1 tsp. fresh minced ginger,
1 medium green pepper,
1/4 c. peanut oil,
1 mango,
3 oz. carrots,
1/3 c. scallions.
