Creole Sauce

Creole sauce is a spicy tomato sauce similar to spanish sauce that you see on many menues.

1/2 lb. onion,
4 oz. green pepper,
4 oz. celery, 8 garlic cloves,
1&1/2 lb. vine ripe tomato,
1/2 tsp. dry thyme leaves,
1/2 tsp. oregano,
4 ea. bay leaf,
1/2 tsp. sweet basil,
1 tsp. sea salt,
1/2 tsp. cayenne pepper,
1/3 c. scallions,
1/4 c. Italian parsley
