Risotto With Shiitaki Mushroom And Tomato Vegetarisn

This is a vegetarian recipe. Use a 4 qt. pot. Yield is 3&1/2 qts..Cooking time about 45 minutes.
3 c. Arborio rice, 6-8 garlic cloves, 3 oz. celery, 3 oz. carrots, 5-6 oz. onions, 1 c. dry white wine, 2 tsp. sriracha hot chili sauce, 2 T. sea salt, 3 T. olive oil, 1 T. black truffle oil, 1 c. scallions
