Black Rice With Fish Cubes

This healthy recipe is for 1. cooking time 50 1 hr.

1/2 lb. favorite fish cubes, 3 c. fish stock to poach fish and 1 c. fish stock for rice., 4-5 oz. onion or shallots, 2-3 oz. sweet potato, 1/2 c. black rice, 2 oz. celery, 5-6 oz. fresh tomato, 1-2 oz. green pepper, 1/4 c. roasted unsalted sunflower seeds, 1/2 tsp. sea salt for rice and 1/2 tsp. sea salt for poaching, 1/4-1/2 tsp. black pepper, 3 T. virgin olive oil or ( not healthy butter)
