Long Grain Brown Rice With Mushrooms

1/2 lb. button mushrooms or your favorite, 6-7 oz. Vidalia onions or shallots, 6 garlic cloves, 5 c. stock or water, 3 bay leaves, 2 tsp. thyme leaves or your favorite herbs, 3 c. rice, 3 tsp. sea salt, 1 tsp. black pepper. 30-40 minutes cooking the rice. Makes about 3 qts.
