Fish And Corn Chowder

1 & 1/2 lbs. skinless and boneless fish ( your favorite), 8 oz. paper thin sliced potato, 8 oz. diced potato, 1 c. diced onion, 1 c. sliced leeks, 2 and 3/4 qts. fish stock, 1/3 - 1/2 c. minced Italian parsley, 2 bay leaves, 2 tsp. dried thyme , 1/2 lb. frozen corn, 6 garlic cloves, 1/4 c. small diced salt pork, 2 c. dry white wine, 2-3 oz. celery, 1/3 c. scallions, 6 oz. tomato.
