Dried Fava Beans With Potaoes

1 lb. dried fava beans, 2&1/4-2&1/2 lbs. Idaho potatoes, 10-12 oz. vine ripe tomato, 8 oz. onion, 5-6 cloves garlic, 1 tsp. dry or fresh thyme leaves, 5 oz. celery, 5 oz. carrots, 3 bay leaves, 1 T. sea salt, sriracha hot chili sauce about 1/2 tsp.
cooking time about 2&1/2 hrs. yield is 3 & 1/2 qts.
