The Best Chicken Thighs With Black Rice
Good protein and healthy rice
This recipe is slightly different than most rice recipes.
It is close to risotto because of the number of vegetables that dissolve.
The texture of the rice stays chewy.
1 & 1/4 lb. bone in skin off thigh,
1 & 1/2 c. black rice wash thoroughly in cold water,
6 oz. onion,
1 stalk celery,
4 oz. carrots,
4 garlic cloves,
4 bay leaf,
2 tsp. thyme leaves,
1/2 c. dry cranberries,
1 tsp. salt and pepper mix added last,
top with toasted almonds,
