Shrimp With Brown Rice Noodles

recipe for 3 or 2 hungry people.

1-1/4 lbs. shell on shrimp,
2-3 oz. fresh ginger minced,
8 oz. noodles,
5 garlic cloves,
3 oz. peeled and seeded cucumber(julienne),
4 oz. button mushrooms,
3-4 oz. carrots,
3 oz. onion,
2 oz. peeled celery,
3 oz. green pepper,
1/3 c. oyster flavored sauce,
1/8 c. hoisin sauce,
1 tsp. sriracha hot chili sauce,
1/3 c. peanuts,
1 T. black sesame seeds,
1/4 c. peanut oil,
3/4 c. scallions sliced on a slant,
2 T. roasted sesame oil,
