Sweet Potato Medallions With Cheese

Peel and cut about 3/4 inch rounds.
Oil a roast pan.
Place rounds in pan then turn so both sides have oil.
Season with allspice,
cinnamon,
salt and pepper.

Roast at 490 degrees 17-20 minutes. Lower temperature to 275. Top with your favorite shredded cheeses. Two minutes in the oven will allow the cheese to set. Reheat for 10 minutes at 300 degrees.
