The best baby lobster tails and shrimp with cream

This recipe will be one of my favorite. If you are not happy with this recipe, explain why.
Recipe for 2.

5 bay lobster tails,
12 shrimp 16-20 ct. shell on,
5 ea. small button mushrooms,
1 c. dry white wine simmered in the shrimp shells,
1/4 c. shallots, 1 vile saffron threads,
3/4 c. fine julienne carrots,
4 garlic cloves,
1/4 c. scallions.
