Shrimp With Fried Brown Rice

1 lb. 13-15 ct. shell on shrimp,
1 c. uncooked brown rice cooked in shrimp stock with 1/2 tsp. salt for 35 minutes,
2.5 oz. onion,
1 T. minced fresh garlic ( not that crap in a jar ),
5 oz. buttom mushrooms,
4 oz. snow peas,
simmer shrimp shells in 1/2 qt. water,
1 c. scallions,
3 oz. red pepper,
2.5 oz. carrots,
2.5 oz celery,
1/4 c. peanut oil,
1 tsp. roasted sesame oil,
1 T. soy sauce,
1 tsp. hoisin,
1 oz. ginger,
1/2 tsp. salt,
1/4. tsp black pepper or hot sauce.

I ate the leftovers cold with or without dressing.
