The Best Cream Of Mushroom Soup

14 oz. button mushrooms( the best for soup ),
5-6 oz. onion,
1/2 c. flour,
2.5 oz. butter,
49.5 oz. chicken stock ( fresh is best ),
1/4 c. quality dry sherry,
1/2 pt. heavy cream,
1 tsp. salt,
1/4 tsp. black pepper.

I\'m aware what a true roux is. Yield is close to 3 qts
Won\'t be as good but you can use vegetable stock and olive oil instead of butter and use corn starch instead of flour.
