Pork Shoulder Stew

Pork shoulder for stew is the most tender and juicy cut. No store bought stock is used in this recipe.
After 15 minutes of simmering the potatoes are added so they don't become pureed. 1 hr. more and everything is tender. Now reduce to reach the correct sauce thickness.
