The flavor of this dish is out standing because of the use of a gelatinized pork shoulder stock. To achieve the full flavor you need the bones or less of a flavor with chicken stock. Always use the bones of the animal your preparing. Best to eat soup within 15 minutes of completion so the noodles don't absorb to much of the liquid.
