the adjustment in the recipe is the correct amount of lite olive oil.

2 lb. unpeeled Idaho potato,
1 tsp. minced garlic,
1/6 c. oil which is 1/2 of what I used in the video ,
1 tsp. salt, 1/2 tsp. pepper,
1/2 c. pecorino romano cheese,
1 tsp. smoked paprika

450 degrees convection for 30 to 35 minutes.
