using a 18-8 scoop balls are .7oz. bitesize for a cocktail party. 40 balls using 1/3 of this recipe. 21 patties 4 oz. ea. can be made from recipe. Finished products weighs about 5.25 - 5.5 lbs.

1 lb. risotto,
4.5 oz. onion,
1 T. fresh garlic ( don't use chopped garlic in oil from supermarket),
5.5 oz. white mushrooms,
1-2 tsp. salt,
2 tsp. sriracha hot chili sauce,
almost 2 qts. stock,
1 stick unsalted butter,
1/2 c. dry white wine,
1 tsp. dried thyme leaves,
1/3 c. chopped leafy parsley,
