Rotini With Spinach, Mushrooms And Tomato

A great meal for 1 person or 2 side dishes. No extra sauce, just the olive oil.

1/2 c. virgin olive oil,
2 T. fresh minced garlic,
6 oz. mushrooms (any kind),
8 oz. baby spinach chopped,
2 oz. onion,
1 oz. carrots for color,
1 tsp. salt
1/4 tsp. black course grind black pepper,
6 oz. rotini,
1 tsp. ea. dry oregano and basil or fresh,
12 cherry tomatoes.
