2 ea. 8 oz. boneless pork chops trimmed of fat,
1 tsp. sage,
3 large garlic cloves,
3 oz. onions or shallots,
14 oz. peeled and cut apple (sweet),
1 c. heavy cream,
1/3 c. course shop flat parsley,
1/4 c. scallions, 1/4 c. craisins,
1/4 c. diced red pepper,
1 tsp. allspice,
1/2 c. dry white wine ( no cooking wines ever),
5.5 oz. any mushroom,
1/3c. pork fat
