Skinless Stewed Chicken Thighs

Once the sauce comes to a boil set at simmer for 40 minutes.

1 lb. 4 oz. bone in and skinless,
2 T. butter,
3-4 oz. onion,
1 T. minced garlic,
1.5-2 oz. celery,
1.5-2 oz. carrots,
1 large rosemary stem,
1/8 tsp. cayenne pepper,
1 T. fresh parsley,
1/4-1/2 c. dry white wine or red.
