Black Bean Salad With Quinoa And Brown Rice

1 T. chia seeds soaked in a 1/3 c. using 1/4 c. cold water,
1.5 oz. ea. red and green peppers,
1/4 - 1/2 oz. fresh minced ginger,
1/2 c. raw brown rice,
1/4 c. any color uncooked quinoa,
2 tsp. salt,
1 tsp. black pepper,
1 c. sliced scallions or chives,
1 c. uncooked black beans,
1/3 c. extra virgin olive oil,
1/4 c. balsamic vinegar or lemon juice,
2 oz. cucumber remove seeds,
1.5 oz ea. carrots and celery,
2.8 oz. fresh broccoli no stems,
1.5-2 oz. asparagus,
1/2 of a chili pepper,
10 kalamata olives sliced,
14 ea. cherry tomatoes cut in 6th if small in 1/2.
1.5 oz. red onion,
optional 1/2 c. fresh corn.
