Eggplant Parmesan With No Sauce

Ignore 5 minutes@488 degrees. Go for 4 minutes @550 degrees convection oven. 3 portion.

3/4" thick eggplant slices,
1-11 oz. tomato 3/8" slices,
1 T. grated cheese ( your favorite) on ea.
1 T. dry basil or 1/4 c. fresh minced,
2 T. fresh garlic,
5-8 capers on ea.
3 oz onion
Don't use the mozzarella I used. Doesn't melt well. Shredded works better.
