Sweet And Pungent Hawaiian Pork

1 lb. trimmed country style ribs or loin or filet. The filet will cook in less time and will shrink more. 2 portions if very hungry.

1 egg white,
3/4 c. corn starch for meat.,
1 and 1/4 c. white vinegar with 1/3 c. light or dark brown sugar,
2 T. corn starch with 2 T. cold water or stock to thicken sauce,
2 T. pickled ginger,
1/2 tsp. garlic,
7 oz. green pepper,
2 T. soy sauce,
1/4 c. ketchup,
6 oz. fresh pineapple,
1/3 c. scallions,
1 egg white,
1/2 c. peanut oil,
1/2 tsp. salt,
1/4 tsp. black pepper,
1 tsp. sriracha hot chili sauce,
1/2 c. maraschino cherries and shredded coconut
