The Best Pork Neck Bones Stock

used for making sauces or pork flavored meals

2 & 1/2 lbs. pork neck bones,
1 lb. onions,
6 oz. celery,
6 oz. carrots,
4 ea. bay leaves,
1 tsp. dried thyme leaves,
4 qts. water,
1/4 c. tomato sauce,
1 tsp. garlic.

roast bones for 20 minutes at 480 degrees.
Simmer bones for 2 hrs. and 45 minutes.
