Brown Rice Kale And Mushroom Salad

4 - 5 portion

mix together for cooking rice 1 1/4 c rice,
2 1/2 c. water,
1 tsp. salt
1/4 tsp. black pepper and 2 T. olive oil.
1 1/4 c. brown rice, 7 oz. any mushroom,
5 large garlic cloves,
1/2 c. onion,
3 oz. red pepper,
7 oz. sweet potato,
3 oz. sweet potato,
3 oz. celery, 2 oz. chopped kale ( no stems ),
1/4 c. red onion,
1/3 c. scallions,
1 tsp. dried thyme leaves or fresh,
2 T. virgin olive oil with 2.5 T. fresh lemon juice added to salad when finished.
