1 c. any quinoa cooked from 1.3 c. ,
1/2 c. fresh parsley ,
1/3 c. olive oil,
1 T. balsamic vinegar or lemon juice,
1 tsp. dijon mustard,
1/3 c. pistatio nuts little chopping,
2 o.z. red pepper,
1 T. red onion, 3 oz. tomato,
1/2 tsp salt,
1/4 tsp. black pepper.
1 tsp. minced garlic.
