6-7 oz Onion
3 oz Celery
3 oz Green Pepper
3 Medium Garlic Cloves
1/3 c Fresh Diced Tomato
1 tsp Dry Thyme
1/4 tsp Cayenne Pepper
1 tsp Pink Salt
1 & 1/4 lb Chicken Leg Meat
10 oz Andouille or Smoked Hot Sausage
10oz Trimmed Okra
1 c Brown roux
