How To Prepare Perfect Matzo Balls

Using the correct ingredients to enjoy a light and tender matzo ball. You must use chicken fat, at least once a year. This yields about 14 matzo balls. Cook in chicken broth ( fresh only )

1&1/4 c. matzo meal ( fine not coarse )
5 eggs
1 tsp, sea salt
1/4 c. seltzer water not club soda it has salt
3/4 c. chicken fat or oil
1 tsp. fresh minced dill into mix ( optional )
