High Protein Veg And Bean Stew Gluten Free

This will yield 10 qts. of freezable stew. I pureed 30% to aide in digestion.
Cooking time is about 1 & 1/2 hours or more.

2 c. washed Quinoa,
14 oz. peeled onion ( your favorite ),
6 oz. carrot, 6 oz. celery,
11 garlic cloves,
1-2 oz. fresh ginger,
1 lb. any white bean,
1 lb. any split pea,
1 lb.frozen corn,
1 lb. frozen peas,
1 lb. 3 oz. kale,
4 oz. yellow peppers,
4 oz. green pepper,
1 lb. 3 oz. peeled sweet potato.
