Black Rice Fruit Salad

2/3 c. dry black beans with 1 tsp. salt,
15 golden cherries,
1 & 1/2 c. fresh peaches,
1 c. mango,
2 c. black rice,
1/3 c. red onion,
1/2 c. roasted unsalted sunflower seeds,
1/2 c. dried cranberries ( not craisens),
3 T. virgin olive oil,
1/3 c. green pepper,
1/3 c. yellow pepper,
1/3 c. fresh lemon juice,
1/3 c. fresh lime juice
1/4 c. minced cilantro,
1 c. sliced cherry tomato,
2 T. honey,
3 tsp. sea salt mixed into cooked rice with 1/2 tsp. black pepper

Use as appetizer or cold salad with other buffet items.

cooking time 30-45 min. until tender.
